I love working with phyllo dough - just keep a barely damp dishtowel over it - Back when I had more energy, I would make 4 or 5 different kinds of savory fillings - chili, mushroom, chicken and green onions, stuff like that - and then spend a while making appetizers. I love the idea of Thai chili paste, will have to try using that! Just cut the phyllo into two-layered strips, brush with melted butter, put a bit of filling on the end, fold up in a triangle like a flag, a bit more butter. Then freeze on wax-papered cookie sheets. When frozen solid, put into freezer bags. Then just bake at 350 or 375, until a bit brown around the edges, as needed. Sadly, there is no low-carb equivalent for phyllo dough.
  2. Once I learned that corporations like JP Morgan Chase consider it just good business to walk away from a property whose mortgage is more than it is worth - then I say what the hell. And even more - JPM guy Dimon says it is immoral for homeowners to do that, but okay for his company, because then it is a business decision. Oh hell no - it is a business decision for everybody. I got a complete (free) refi, not the government thing (which is only good for 5 years I think, so glad I did not get it!) and my interest rate went from 6.25 down to 2 and will rise to 3 and then 4 in the next 6 years - but never any higher. I could never have qualified for that refi on my own, even with paying closing costs. I am sure Wells Fargo did not want another Florida house on their hands, I don't think they are all that kind-hearted. But it galls me that the banks are doing dishonorable things all the time, yet telling us we must be honorable. Fear, can your friend declare bankruptcy? It may be easier in Florida, no one can take your home or paid-for vehicle. Except the IRS, and they don't want any more homes, either. Then the property taxes and upkeep start piling up.

Fear, I have seen criticism (not directed at me personally) that getting a modification is just wrong because we signed contracts, banks need profits, should have planned better, and even more snotty crap. My rationale - not that I hesitated for a minute - people have also posted, in so many words, that they do not care if other people lose their jobs in order for their stocks to rise in value. That's all I needed. After all, djs111 smiles, I have had two signed contracts yanked out from under me and sent to India in order to enhance Verizon's stock and earnings. So I figure I am being quite correct in manipulating the American economic system for my own needs, n'est-ce pas? The bank did yank me around since last December, very stressful, they have a game where they say make a lower payment then say oh, no, sorry - and by the way, we need the difference in payment plus penalties in two days or there goes your home. When I finally talked to a real person, things got dramatically better - I intend to call her today and thank her, which may make her look more kindly on the next person - but until I opened that envelope and saw the finalisation and new payment, I was v. resigned to another mountain of stress. Advice to anyone else - underwriter said make all correspondence short and to the point, no need to get testy, don't complicate things, make multiple copies of everything so you can overnight stuff the minute they say for the third time they cannot find your documents. And use your phone contact's name when talking, in a friendly manner. Become a person, not case number 756. That's life, really.
  4. Just want to mention that it took 10 extremely stressful months, but I finally got a really great loan modification from Wells Fargo!!!! To anyone else trying for one of these - send in everything they ask for, and - I think most important - be polite, be friendly, be polite, do not disagree about anything. I had gotten so many foreclosure and mod denial letters from them that I almost tossed the handful I got today - BUT - lo and behold - refi with no costs, dramatically lower payment, I can breathe again. Well lots of other problems, but at least this one is resolved.

  7. I believe that at the time some Clay fans wished to be seen as sophisticated savvy wimmen, not as "Playmates", because that was demeaning. Almost everyone has let it go. And this time tomorrow I will be in Jacksonville. Yessssssss!!!!!!!
  8. Claymates - at the time, that name was too close to Playmates, Hugh Hefner era, and was felt to be a put-down to feminists. Or something like that. Yeah, I never did get the hatred, but some just hang on to it for some reason.
  9. I kind of think that since "asshole" was on his cue card, he was supposed to say that and get bleeped, so Whoopi could play off it - evidently yesterday she was trying to call Mel Gibson an asshole, and was unsuccessful. Perfectly executed.

    Top Chef

    I forgot about new Top Chef, but caught episodes so far yesterday - nothing memorable yet, to me, but I do think it should be called "Top Chef - Padma Has Really Big Breasts!!!!! and is Pregnant!!!!!!" instead of Top Chef - Washington DC. I recently read that Padma has been seen out and about with David Spade. That is just too weird to contemplate, and I am not sure why. Did laugh when people who commented WTF? From Salmon Rushdie to David Spade? were informed that they were just prejudiced against short people. Sort of like telling people who don't like Clay's music that they are homophobes. That new Cooking Network - or whatever - lots of old cooking shows, saw an old one with Padma, she really was not that good, sort of awkward, bounced around with a pony tail and looked really cute, though.

I did not like Chelsea Handler at first, a few years ago, but now I do love her no bullshit straight-faced way of saying things and her complete honesty about herself (she says understands she looks older than her years, according to what internet people say about her. Bwah!) And I like how she doesn't do that "look at me I'm so outrageous that I am charmingly cute" thing that Craig Ferguson does. Don't flame me, Ferguson is very funny, but can be a tool and a bit too elfin at times. JMO, etc. I really enjoyed the interview, and I also enjoyed how comfortable Clay was with that interview. She is not one to give insincere compliments. Her guests can be a mixed bag, but the night before she had Bobby Lee and two others on, and they were hilarious. Very quick wit.
  13. Putting this recipe here as well as in the diet thread - really great easy quick bread, only one net carb per slice! Made with flaxseed meal. The carbs in ground flaxseed are almost all in the fiber. So a good-sized piece of this bread has less than one gram of carb, since the rest of the carbs leave you with the fiber. And lots of fiber is good even if not on a diet, so just good stuff all around. I found one pound bags of ground flaxseed at Winn-Dixie, I assume I can get it cheaper on the web, also this does take 5 eggs, but makes quite a big slab of bread. Also, I cut down on salt, can't leave it out entirely as it is needed for rising. Plus I used olive oil and some garlic and Italian herbs. Very easy and quick to make, there is also a video! I used Stevia for the sweetener, just a tiny bit, though. very low carb focaccia I may try putting in some shredded cheese next time, and this is a soft bread, need to figure out how to make firmer slices somehow. And I used plain aluminum foil to line baking sheet - the oil in the batter was sufficient. Oh - read all the comments - there are lots of really good variations and suggestions. And now I can haz cheezburgers.

  21. Heeee......right back! Do you know how many times Bahama gets mentioned in any news whatsoever, in a non-Caribbean-resort-island way? Three times a decade! Tops. The drive up to there from Raleigh would be pretty, now (excepting 15-501, of course). Orange Factory Road now goes over a gorgeous reservoir, instead of the kind of scary down-and-up of a ravine thing it had going on when I lived there.
  22. Let's see........Avatar - gorgeous, great music.....terrible script, yes I know it was from a comic book, but really!!! When all is said and done, would rather see District 9 again. Alice in Wonderland - I loved every second of it! The 3-D is just right, the colors and cast and even the wardrobe are fantastic. I am happy that it has become a hit. Alan Rickman's gorgeous voice, Johnny Depp is perfect, Helena Bonham-Carter Red Queen is perfect, and the girl who plays Alice is perfect. Anne Hathaway perfect and funny as the White Queen. She has oddly huge facial features, but very beautiful. Stephen Fry perfect as Cheshire Cat, and the guy from Little Britain also perfect as Tweedle-Dum and -Dee. Even the Playing Card soldiers shuffled as they moved. Depp managed to make the Mad Hatter, insane makeup and tatty clothes and all - oddly sexy. I would have stayed with him! All, um, perfect. I have read reviews that say the plot is questionable or something, but I was too busy just soaking in all the pretty and fantastic. And really - who needs a plot for Alice in Wonderland? It is not like a John Le Carre spy story. Hmmmmmmmmm.....thinking about it, I don't think Crispin Glover was all that great a choice to play the bumbling villain. Maybe the Cheshire Cat looked a little too cartoonish, like Garfield with twinkly blue eyes. But anyway, I recommend this movie wildly! I am really really looking forward to a movie called "Shanghai". John Cusack AND Gong Li AND Ken Watanabe AND Chow Yun Fat!!!!!!!! There doesn't even need to be a plot!!!!!!! I probably should just go ahead and order the DVD right now.
  23. Oh my! I used to live in Bahama! In 1985/1986! On Blalock Road! I'm pretty sure we don't have a connection! There were only a few hundred people in Bahama then, and I never went into "town" unless I had a package at the post office, and most everyone lived on acres and acres, in the woods, so not much socializing. Treyburn - exclusive golf course and community. Named after a North Carolina senator, and I heard that Michael Jordan was an investor, and had a house there, too. The photographer seems really good, I think.
  24. Couchie - not sure; when I googled Antivirus soft i saw that a lot of people had gotten it - some said maybe they clicked on something on facebook? I don't know. I prolly broke my rule of always right-click closing and clicked on something bad. But it was a beeyotch to get rid of. It literally blocked me from running any applications. Even notepad and task manager. And security popups constantly (fake ones) and the occasional porn page. Finally just restored back a week. From internet remarks, looks like Norton was useless, and they wanted a lot of money to fix it. I went ahead and bought AVG; it checks everything. Oh, I got an email from a "work" name, too, and deleted it.
